THE AMORETTI 2009 NATIONAL PASTRY TEAM CHAMPIONSHIP ANNOUNCEMENT
(New York, NY – October 1, 2008) Carymax, LLC announced that the theme for the 2009 National Pastry Team Championship is "Time". The Championship will be held July 6 & 7, 2009 at the J.W. Marriott Desert Ridge, Phoenix, AZ. The winner of this competition will compete in the 2010 World Pastry Team Championship as Team USA, July 5 & 6, 2010 at the J.W. Marriott Desert Ridge, Phoenix, AZ. The theme for the World Championship will be announced in 2009.
The National Pastry Team Championship, held every odd-numbered year, features teams comprised of three pastry chefs each. Teams compete for thirteen hours over a course of two days for the first place cash award of $50,000. Teams are required to make a sugar showpiece, a chocolate showpiece, an entremet (cake), an entremet glacè (frozen dessert), three different types of chocolate bonbons, a plated dessert and an element as you to be determined.
"We don't want to be too predictable, so every few years we change something," says Michael Schneider, founder of the event.

THE AMORETTI 2008 WORLD PASTRY TEAM CHAMPIONSHIP CROWNS NEW WORLD CHAMPION
(New York, NY – September 10, 2008) Team USA won the Amoretti 2008 World Pastry Team Champions after a grueling thirteen-hour marathon of pastry preparation and presentation. The event was held at the Gaylord Opryland Convention Center & Resort in Nashville, TN, on August 31 and September 1, 2008. Team Members included: Laurent Branlard, Team Captain, Executive Pastry Chef for the Walt Disney World Swan and Dolphin Hotel, Orlando, FL; Stéphane Tréand, Executive Pastry Chef at the St. Regis Resort, Monarch Beach, CA; and Dimitri Fayard, Owner of Vanille Patisserie, Chicago, IL.
The Silver medal was won by Team Japan. Members of Team Japan were: Hideki Kawamura, Team Captain, Chef/Owner of Patisserie A Tes Souhaits, Tokyo; Koji Fujita, Pastry chef, Hiro Coffee, Osaka; and Koichi Izumi, Pastry Chef, Salon de the Cerisier, Toyko.
The Bronze Medal was won by Team Switzerland. Member of Team Switzerland were: Guilano Sargenti, Team Captain, Head of Development, Confiseur Läderach, AG; Elias Läderach, Production Development Confiseur Läderach, AG, Ennenda; and Fabian Rimann, Chef-Patissier, Hotel Baur au Lac, Zurich.
The theme for the fourth world championship was IMAGINATION. Competitors from Belgium, China, Italy, Japan, Mexico, Russia, South Korea, Switzerland and the USA used their imaginations to create juried components. According to the rules, all components made during the competition conformed to the theme.

TEAM BRANLARD WINS GOLD
AT THE AMORETTI 2007 NATIONAL PASTRY TEAM CHAMPIONSHIP
(New York, NY – July 17, 2007) Team Branlard won the the Amoretti 2007 National Pastry Team Championship, held July 2-3 at the Gaylord Opryland Resort in Nashville, TN. The team was led by Laurent Branlard, the Executive Pastry Chef at the Walt Disney World Swan and Dolphin Hotel, Orlando, FL. He and his teammates, Frederic Monti, Executive Pastry Chef at The Greenbrier,WV, and Stéphane Tréand, MOF, the Executive Pastry Chef at the St. Regis Resort, Monarch Beach, CA, will receive a $50,000 cash prize in addition to their awards for Chocolate Artistry, Sugar Artistry, Degustation, and Presentation. Their sponsors were Nielsen Massey Vanillas, Swiss Chalet Fine Foods, and GTI Designs. Team Branlard will represent Team USA in next year’s Amoretti 2008 World Pastry Team Championship.
Team Caldwell took the Silver Medal and also received the Team Sportsmanship award. Jin Caldwell was the team Captain, and is the Pastry Chef/Chocolatier at Ethel M Chocolates, Las Vegas, NV. Her teammate Kristina Karlicky works at Daniel Boulud Brasserie, Las Vegas, NV, and Sally Camacho is the Pastry Chef at Bradley Ogden, Las Vegas, NV. The team is sponsored by E. Guittard Chocolates, Koerner, and LCM.
Team Ruskell is the Bronze Medal winner of the Championship. Richard Ruskell is the Executive Pastry Chef for Montage Resort & Spa, Laguna Beach, CA. Team member Louise Chien also works at the Montage Resort & Spa, while their fellow teammate Stephen Durfee is currently an instructor at the Culinary Institute of America Greystone, Napa Valley, CA. Team Ruskell is sponsored by Carmi Flavors and Frozen Desserts Magazine.
The 2007 Pastry Chef of the Year award went to Jean-Philippe Maury, MOF. He is currently the owner of the pastry shop Jean Philippe Patisserie at the Bellagio Hotel as well as the Executive Pastry Chef of the Bellagio Hotel in Las Vegas.

2007 NATIONAL PASTRY TEAM CHAMPIONSHIP MOVES TO NASHVILLE
(New York, NY – November 1, 2006) Carymax, LLC will host their 2007 National Pastry Team Championship at the Gaylord Opryland Resort and Convention Center in Nashville, TN. The two-day Championship will be held from July 2-3, 2007. The theme of the competition is Country Music Song Titles. This theme complements the new location as the resort is home to the legendary Grand Ole Opry, a performance venue that has showcased numerous country music stars.
Along with a new location, Carymax is also presenting a new President of the Competition Jury. Franz Ziegler is a patissier, chocolatier, and a consultant who has been an avid participant in the Championships over the years.

WINNERS ANNOUNCED FOR THE
AMORETTI 2006 WORLD PASTRY TEAM CHAMPIONSHIP
PRESENTED BY CALPHALON
(New York, NY – July 17, 2006) The winners of The Amoretti 2006 World Pastry Team Championship presented by Calphalon, were announced on July 8, 2006. The awards ceremony that was held after the conclusion of the two-day event, revealed the results of one of the year’s most amazing events in the pastry industry. First Place was given to Team France, who received the coveted title of World Pastry Champion in addition to the top cash prize of $50,000. Team Japan earned Second Place and a cash prize of $15,000. Team USA received Bronze Medals and $10,000 for Third Place.
Team France was comprised of Bruno Montcoudiol, M.O.F., Franck Michel, M.O.F., and Franck Kestener, M.O.F. In addition to winning First Place, Team France also received awards for Sugar Artistry, Degustation, and Presentation. Team Japan was captained by Koichi Izumi who led his teammates Masaaki Hayashi and Shuji Muto. Team Japan, sponsored by Dobla and Felchlin, also received the Chocolate Artistry award. Team USA’s Third Place was earned by Laurent Lhuillier, James Mullaney, and David Ramirez. Team USA was sponsored by Carmi Flavors, Chocovision, E. Guittard, Felchlin, Godiva Chocolatier, Hero, Nielsen Massey Vanillas, and Swiss Chalet Fine Foods. Team Mexico’s Thomas Trevethan , Barbaciano Kavil Chan, and Jose Polanco Pech received the Team Sportsmanship award. Team Mexico was sponsored by Carmi Flavors and Demarle.
The Amoretti 2006 World Pastry Team Championship presented by Calphalon was an amazing event, and preparations are already underway for 2007. Next year’s National Pastry Team Competition will be held on July 2-3, 2007 at the Gaylord Opryland Hotel in Nashville, TN.

Team USA is comprised of Laurent Lhuillier, Ritz Carlton Orlando, Fl, Jim Mullaney, The Cloisters, Sea Island, GA, and David Ramirez, Royal Pacific Resort, Orlando, FL. As National Pastry Team Champions, Team Lhuillier will represent the United States as Team USA in the 2006 World Pastry Team Championship.

(New York, NY – July 13, 2005) The winners of The Amoretti 2005 National Pastry Team Championship were announced on July 7, 2005, at the J.W. Marriott Desert Ridge, Phoenix, AZ. Team Lhuillier won First Place, along with a $50,000 cash prize and the title of the 2005 National Pastry Team Champions. Team Lhuillier is comprised of Laurent Lhuillier, Ritz Carlton Orlando, Fl, Jim Mullaney, The Cloisters, Sea Island, GA, and David Ramirez, Royal Pacific Resort, Orlando, FL. As National Pastry Team Champions, Team Lhuillier will represent the United States as Team USA in the 2006 World Pastry Team Championship.
Team Salazar, with Carlos Salazar, Yoni Morales, and Raymond Lammers, were the Second Place winners, earning Silver Medals and a $15,000 prize purse. Team Janvier, which included Pascal Janvier, Alain Roby, and William Leaman, were the Bronze Medal winners and received $10,000 for Third Place. For the non-monetary awards, Team Lhuillier received “Best Chocolate Artistry” as well as “Best Degustation,” Team Salazar won “Best Presentation,” Team Angnardo earned “Best Sportsmanship, and Team Ruskell garnered the award for “Best Sugar Artistry.”
For his creative influence within the pastry industry and his outstanding service to his fellow chefs, Donald Wressell, Executive Pastry Chef, Four Seasons, Los Angeles, was named the "Pastry Chef of the Year".
The Amoretti 2005 National Pastry Team Championship was a 13-hour, two-day competition, that was held on July 6 and 7, 2005. Teams are required to make the following elements: a chocolate showpiece, a sugar showpiece, three identical entremets (cakes), three identical entremets glace (frozen desserts), fourteen identical plated desserts, and an assortment of petits gateaux and bonbons. The 2006 World Pastry Team Championship will have Team USA compete against eleven other countries for the title of World Pastry Team Champions.
