Laurent Branlard, a native of France, is Executive Pastry Chef for the Walt Disney World Swan & Dolphin Hotel.  He represented the United States in the 2002 World Pastry Team Championship, and became a World Champion when his team took first place.  Before joining the Swan & Dolphin, Laurent was executive pastry chef for the Ritz-Carlton Hotel, Buckhead in Atlanta and executive pastry chef for the Ritz-Carlton in St. Thomas, USVI. He worked throughout France as a pastry chef and caterer.  Laurent was named one of the 10 best Pastry Chefs in America in 2003 and 2004 by Pastry Art & Design magazine Frederic Monti, holds a degree from LeNotre, Paris, France.  He joined The Greenbrier culinary staff in December 2004 as the Executive Pastry Chef. Prior to The Greenbrier, he was the Executive Pastry Chef at The Ritz-Carlton, Naples and Atlanta Buckhead.  He has worked extensively in New York and France. Among his numerous achievements, Chef Monti was named one of the “Top Ten Pastry Chefs in America” in Pastry Art & Design magazine in 2003 & 2004.  In 2003 he and his team took the Silver Medal at the 2003 National Pastry Team Championship” held in Las Vegas, Nevada.  In  2004, he took first place and the gold medal at the Food Network sugar showpiece competition in Las Vegas. Stéphane Tréand is Executive Pastry Chef at the St. Regis Resort, Monarch Beach.  He has worked internationally as an instructor and consultant.  In 2004, Stéphane became an M.O.F (Meilleur Ouvrier de France), the top honor in the pastry industry in France. Specializing in sugar and chocolate showpieces, Chef Tréand has been in the pastry industry for over 25 years, winning awards shortly after his career began. In 2002 Stéphane was a member of Team France at the World Pastry Championship in Las Vegas and took second prize in the international competition.  In July 2005 he won the Food Network’s “Sugar Showpiece Challenge” in Phoenix, AZ.
